There is a dearth of taquitos and burritos and fish tacos and other favorite Mexican dishes in Bedford. There's Tequila Mockingbird in New Canaan, La Hacienda del Sol in Mt. Kisco but nothing closer if you have a hankering for good guacamole.

The wait may be over—Salsa Fresca will be opening in Bedford Hills by April 1, bringing fresh Mexican food "with a touch of culinary flare" to our local dining options. The store will be located between Radio Shack and Bedford Bagel Bakery in the plaza on Bedford Road. 

The store is a collaboration between Seth Hirschel of Bedford Hills, Marc Miles and John Tucker of Millerton, NY, and is the first of five planned for Westchester and Fairfield counties.

All three men are local business owners and fans of Mexican food. The concept was a result of sensing demand for additional cuisine options in the immediate community paired with a broader goal of expanding fresh Mexican food throughout the region.

Their first store in Millerton is their 'proof of concept' store and was opened two years ago. It is doing well and has great reviews from the community.

The unique goal of the store incorporates concepts of local, health-minded, family-friendly, and environmentally responsible ingredients and operations as well as a budget concious approach.

Hirschel says because he lives in Bedford Hills he suggested this as their first Westchester location, "knowing that we are under-served here."
