Truck Brings New Mexican Fare to Bedford

The highly anticipated opening of Nancy Roper's 'Truck' on Old Post Road in Bedford is slated for late August.

Nancy Roper will continue to draw upon her roots in New Mexico when Truck, her newest culinary venture, opens in Bedford later this month.

The location is 391 Old Post Road, at the , which stood for 30 years before closing in 2011.

This will be the owner-chef's second establishment in the area—Boxcar Cantina in Greenwich also features the authentic fare Roper remembers from her childhood, according to Gabriel Moroianu, Truck's general manager, who was on-site this week interviewing potential staff.

When asked to describe the menu, he said it was farm-to-table.

"It's organic, it's all-natural, it's sourced from Hudson Valley and Connecticut farms. It reflects Nancy's upbringing in Northern New Mexico," he said.

It's also inspired by "down-home cooking traditions," and influenced by "Cowboy, Native American and Mexican cultures," according to promotional materials from the restaurant, which is tentatively slated for a soft opening on Aug. 27.

Moroianu explained that produce, dairy and protein would be sourced from local farms from across the region. Tacos, enchiladas and salads will be made with grass-fed beef, sustainably raised pork and local vegetables.

The drinks menu will feature craft beers on tap, wine and classic margaritas.

Why the name Truck?

"Route 22 used to be one of the busiest traffic arteries in the state of New York before the highways were developed," he said of the 340 mile route, which stretches from the Canadian border to New York City. "In fact, this location used to be a truck stop."

Moroianu also explained the name reflected their respect for and relationships with farmers, and represented the fresh food deliveries trucked to the restaurant.

The interior design has a rustic feel and features salvaged wood paneling and antique wallpaper, conveying a casual atmosphere suitable for couples, friends and families. Notable decor includes a front counter originally belonging to the Roebling family, builders of the Brooklyn Bridge, and a Texas Longhorn skull, hand-selected in Waco, TX, by Longhorn preservationist Frank Sharp, according to the restaurant's website.

Okay but let's focus on the charter of the BOE. The Board of Education believes its primaryRead More responsibility should focus on creating an educational environment that will help our students become knowledgeable individuals, problem-solvers, quality producers, effective communicators, wholesome individuals, collaborative workers, ethical individuals, life-long learners, and responsible, accepting and involved citizens. We remain committed to providing a high quality, well-balanced educational program that supports our faculty and staff and helps our students meet and exceed State standards as well as high district goals. It says nothing about protecting the investments of taxpayers by voting "no" on every expenditure. We need forward thinking, broad minded individuals to help guide educational direction of our schools. Keeping expenses reasonable and and in check should be a consideration by the educational focus should be primary. Although novices, Trustees Tobin and Schiff have helped true the course of the board back to the direction of education. Mr Stone who himself admitted he had never even been to a BOE meeting before deciding to run offers no sense of motivation other than Dr Treyz and his friends think he'll help shift the direction back toward finance. Mr Holbrook is no different a candidate than Mr Lipton himself was 6 years ago.
